“Prosciutto di San Daniele”: an outline of reference laws


The D.O.P. mark, i.e. “mark of protected origin”, guarantees that our ham is obtained from selected pig breeds, whose Italian origin, feeding and age of slaughtering is strictly controlled; that pork legs are properly processed in compliance with the rules established by the production code, under which each production stage is controlled and certified by an authorized certification institute; and that, finally, the curing and seasoning of hams take place within the boundaries of the commune of San Daniele, as the particular characteristics of the climate of this territory, which significantly affect the quality of the end product, have been officially recognized and protected by a special law.
Moreover, although our cured ham is still produced in the traditional way, it complies to the safest hygiene and sanitary standards.
