"“It is
not just enough to make hams, I want to make great hams!” (Angelo
Coradazzi) We have always used the best national pork coming from selected breeding and slaughtering plants, and we process it carefully and masterfully, thanks to a know-how passed on for two generations of ham producers. We take direct care of the relations with our clients, whom we consider mostly friends of ours, as we are lucky enough to know them personally. We are sure and well aware of the fact that a direct knowledge of the clientele is the best way to foster and maintain a solid and long-lasting relation, going far beyond the mere business relation. We have decided to remain a family-run artisan firm. During the last few years, going perhaps against the grain and against strict market forces, we decided not to increase our annual production of hams, so as to allow us to concentrate with greater care and attention on quality. The results we have attained prove we were right. We still follow the ancient processing rules: we use only sea salt for salting, we carry out most processing operations by hand, we let our hams mature for a long time only under the natural effect of the unique air of San Daniele. The final result is a limited production of typical cured hams of outstanding quality, which offers us the opportunity and satisfaction to work well, and to our clients the opportunity to choose and get the best.
